Indian Spiced Pumpkin
I met a gal at the AgriMissouri Conference who works for a touring companywho introduces people to great food. Very interesting concept. She gave me this recipe. Have not tried this yet:
Indian Spiced Pumpkin
In a large skillet sauté seeds over medium
heat for 4-5 minutes. Remove from skillet. Set aside.
¼ c. shelled pumpkin seeds
In the same skillet. Heat for 1 minute:
2 T. Olive Oil
1 T. fresh grated ginger
Add and cook for 3-5 minutes:
4 c. peeled, seeded, and cut into ½ in. pieces
Stir in:
½ c. dried cranberries
1 t. cinnamon
1 t. coriander
½ t. cumin
½ t. curry powder
Cook for 1 minute.
Add:
2 c. chicken broth
Bring to a boil and reduce heat.
Cook covered for 10-15 minutes (until pumpkin is tender but not mushy)
Spoon over :
4 c. hot cooked brown rice
Top with:
¼ c. diced bananas
¼ c. pineapple chunks
Garnish with:
Sliced green onion tops
And cooked pumpkin seeds.
4 servings.
