Sebastopol Geese
I have a serious “I WANT”- not a serious “I NEED”. 2 Sebastopol Geese (abt. $60 to $85ea. … as a gosling!). Very unusual breed of geese! An adult will have long spiraled white feathers which nearly touch the ground. Thought to be from SE Europe, cann’t fly, & are very gentle, lay eggs fairly well, & will reach a siz…e of 10 to 14 lbs. I haven’t come up with a good sales pitch yet ! Suggestions??????

10c. Chicken stock
16 oz. (frozen) Hy Vee Country Style Egg Noodles
Fresh Veggies:
½ c. Asparagus spears
½ c. Carrot, sliced
½ c. Green beans
½ c. Cauliflower pieces
1 c. Pumpkin, cubed
2 Celery, ribs chopped
1 sm. Wht. Onion, chopped
½ c. Sm. yellow squash, sliced
1 t. Parsley, chopped
½ t. Garlic, roasted and minced
Salt & Pepper to taste
Bing the stock to a boil. Lower to medium heat and add frozen noodles. Stir off and on. Add remaining ingredients. Simmer until veggies are cooked but still firm.
Tina Lambrecht’s Glazed Pumpkin Cookies
Ingredients
2 1/2 c. all-purpose flour
1 t. baking powder
1 t. baking soda
4 t. Pumpkin spice
1/2 c. Soft butter
1 ½ c pumpkin puree
1 egg
1 t. Vanilla
Preheat oven 350 degrees
Mix one ingredient at a time
Drop by teaspoon
Flatten slightly
Bake 15-20 minutes
Cool
Glaze
Blend:
2 c. Confectioners’ sugar
3 T. Milk
1 t. Melted butter
1 t. Vanilla

2011 Pumpkin Stew
Fill stew pot half full of water, heat
Add:
Sm.Yukon Gold Potatoes, Chunked not pealed
¼ c. Celery, chopped
1 med. onion, chopped
2 Beef Bouillon Cube
Cook about 15 min. over med. heat.
Stir in:
1.5 lb. Stew Meat, cut in small pieces, browned
Salt and pepper
1 t. Minced Garlic, roasted
5 oz. Shitake Mushrooms, sauté
½ c. Petite carrots, pealed
Cook until veggies are cooked but firm
Sir in :
1 ½ c. Pumpkin, cubed
1 c. black beans, drained
Cook gently until pumpkin is tender.
Pumpkin Shrimp Toasts
2011 Pumpkin Shrimp Toasts
½ lb. cooked, shelled & deveined Shrimp
¼ c. Italian salad dressing
1 c. Pumpkin puree
1 t. lemon
1 t. honey
2 T. olive oil
½ c. chopped green pepper
¼ c. chopped yellow onion
Salt/pepper
Minced garlic
¼ c. Pilgrims Choice Sage Derby Cheese, grated
¼ c. Greek Myzithra Cheese, grated
8 toasted round slices (¾ in. thick) French Bread
Marinate shrimp in dressing. Saute: olive oil, green pepper, onion, spices until onions are carmelized. In another bowl: mix pumpkin, lemon, honey and cheeses. Mix sauté and pumpkin mixture. Spread mixture on toasts. Bake 350 for 20 minutes. Top toasts with shrimp and Romano cheese. Broil under medium heat until cheese melts.

1 chopped red onion
1 chopped green pepper
4 chopped celery stalks
Minced garlic
Salt & Pepper
2 Granny Smith apple, peeled and cubed
2 lb browned sage country sausage
1 heaping c. cubed pumpkin
¾ c. dry wht wine
2 beaten eggs
1 prepared box Corn Bread Stuffing
Preheat Oven to 350.
Sauté for abt 7 minutes: onion, apple, green pepper, celery, garlic, salt & pepper.
Add sausage and pumpkin. Cook until heated. Add wine. Cook until wine is cooked down. Gently fold in corn bread stuffing mix. Fold in eggs. Pour into a casserole pan. Top with Romano cheese. Bake 30 minutes
Whole Wheat Penne Pasta with Pumpkin Sausage Sauce
Pasta with Pumpkin Sauce
In a heavy skillet, Brown and drain:
1 lb Odom’s Sage Country Sausage
2 T Roasted minced garlic
1 med onion, chopped
In a sauce pan simmer:
1 c dry white wine
½ c cream
Reduce by ½.
Wisk in:
1 c chicken broth
1 c pumpkin
1/8 t Cinnamon
½ t Nutmeg
Salt & pepper to taste
Simmer for about 10 minutes, until thickens.
Combine sausage mix and pumpkin sauce.
Blend with 1lb Penne whole wheat pasta (cooked).
Put in a serving platter and top w/ shaved Romano

2 chopped onions,1 T. Olive oil,½ c. cider vinegar,½ c. maple syrup,1 c. pumpkin puree,
½ t. chili spice,Salt,Pepper,Sliced Bagget Bread,½ c. ricotta, Chopped mint. Caramelize onions, salt, pepper, chili pepper & oil over medium heat. Add vinegar. Stir until reduced by ½. Add maple syrup & pumpkin stir until thick and reduced. Cool. Set aside. Place bagget on parchment paper under broiler just until lightly toasted. Top each toasts w/ ricotta then onion & squash mixture. Sprinkle with fresh mint.
Pumpkin Charities
Planning for fall. We devote a weekend in the fall to a children’s charity. Sometimes it’s the change in the Farm Fountain ~ sometimes it is a percentage of admission. Each family member seems to have their own favs and passions. Haven’t had our big family meeting yet to decide. We would love to hear from you! Who would you suggest?
